Rhubarb terrifies me: it smells, its leaves are poisonous, and the taste is horrifying. But my husband loves it. He legitimately loves the red satan sticks.... he will rip it from the ground and eat it like a carrot. For six years I have managed to avoid his requests for rhubarb pie by offering a different berry or my county famous blackberry cobbler. My mother recently sent me a package of cookbooks that my grandmother wrote in the mid 70's. I scanned through them and was shocked to see all of her rhubarb recipes. So when Joe brought home a giant armful of rhubarb I knew who to consult... Grandma Sturgeon (shown in the photo below with her walrus cake).
As I perused the recipe book and ran across an interesting twist on a cobbler, the Rhubarb Crumble, and it only had four ingredients!: diet soda, a box of cake mix, mini marshmallows, and rhubarb. The best part is a serving has only 80 calories! (serving sizes is one square approximately 3 inches by 3 inches).
After you preheat the oven to 350 degrees, lightly spray the pan with olive oil, and clean and strip the rhubarb. I chopped mine into half inch pieces. You will need approximately 2 1/2 cups rhubarb. Line the pan with the rhubarb and spread one half the box of cake mix on top of the rhubarb (I used yellow cake mix). Pour the can of diet soda over the entire mixture (I used diet seven up). Gently sprinkle 1/2 cup of mini marshmallows on top. Pop into the oven for 30 minutes.
Honestly this stuff was amazing!!!!! And I can not reiterate how much I hate rhubarb. I may be a secret convert.
